Ahhh, breakfast.
One of the most important meals of the day!
I’ve had many requests for grain-free breakfast ideas over the years. This is why I created our grain-free Paleo cinnamon delight bagels, keto everything bagels, Paleoatmeal, and even our brand new granola (which some are enjoying as a cereal!)
Most recently, I have been following the autoimmune protocol (“AIP”) in order to realign my thyroid antibodies and put Hashimoto’s back into remission (as I did before; read my full story here).
Since AIP is an elimination diet, it removes a large number of foods with the goal of further reducing inflammation. Several of those foods, including eggs, nuts, yogurt, and seeds, were part of my regular breakfast routine and had to be eliminated. I was determined to find a new breakfast option, and this egg-roll in a bowl really filled to bill (and doesn’t contain eggs at all (nor grains, dairy, soy, nuts, or seeds!)
This recipe is wonderful because it’s perfect for batch cooking, or for feeding family or friends a nice brunch. All who have tasted it have enjoyed it, and it serves as a nice break from bacon and eggs, even sneaking in some extra veggies! It keeps very well in the refrigerator or freezer, is easy to make, and light on the budget.
Egg Roll in a Bowl (Grain-free, Paleo, Keto, AIP)
Ingredients
- 1 pound ground pork
- 1 tsp sea salt
- 2 TB organic coconut oil
- 1 small onion, diced (I prefer red for flavor)
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 12-16oz package coleslaw or shredded cabbage
- 2 tsp organic apple cider vinegar
- 3 TB coconut aminos
Instructions
- Brown the ground pork with the sea salt and set aside
- While the pork is cooking, prepare the diced onions and minced garlic
- Heat coconut oil in a large skillet over medium heat
- Sauté onion, garlic, and ginger until fragrant
- Pour in coleslaw mix or cabbage
- Add apple cider vinegar and coconut aminos
- Sauté 3-5 minutes or until cabbage is reduced (looks smaller in the pan and takes up less space
- Add in cooked pork and combine
- Enjoy!
