Baking Hard Boiled EggsThere are a couple of items that have continued to challenge my cooking skills in the last couple of years.  One of them is bacon, and the other is hard-boiled eggs.

With bacon, I’ve decided that there just isn’t an easy fix to cook an entire package at once and walk away.  In fact, trying to do that has caused a grill fire, a grease-splattered oven, countless events of tripping our smoke alarm, destruction of a brand-new skillet, and the loss of an entire box of foil…used up in just one experiment.

So…moving on to hard-boiled eggs!  By George, I think we’ve found a solution for having a gluten free, grain free, soy free, Paleo breakfast/lunch/snack item at the ready, and a week’s worth in just 40 minutes!  This method also solves the peeling problem; no more tiny shards of egg casing all over the kitchen floor.

This way is so easy, I see no reason to go back to boiling them.  Give it a try and let me know the outcome!

Baked Hard-Boiled Eggs

What’s needed:

  • One dozen eggs
  • Muffin tin
  • Large mixing bowl
  • Ice and cold water
  • Storage container


  1. Pre-heat the oven to 325 degrees; place the eggs into the muffin molds
  2. Place the muffin tin into the pre-heated oven
  3. Bake for 30 minutes
  4. When about 5 minutes are remaining on the timer, fill the large mixing bowl with ice and water, leaving enough room in the bowl to add the eggs.
  5. Remove the muffin tin from the oven and submerge the eggs individually in the bowl of ice water (use a hot pad or tongs…the eggs are hot!)
  6. Keep the eggs submerged for a timed 10 minutes
  7. Remove the eggs from the cold water and peel (the peel will come off in large pieces…no more tiny egg shards during the peeling process!)
  8. Store the peeled eggs in an airtight container in the refrigerator for up to one week
  9. Preparation Tip:  Place the hard-boiled eggs individually into sandwich bags or airtight containers for a portioned snack or breakfast on the go
  10. Enhance the Environment Tip:  Crumble the egg shells and add to compost or a flower pot for easy soil nourishment…and less in the landfill!
